Huevos Rotos literally means “broken eggs”, but the name does not tell you why the dish is so satisfying.

The idea is simple: crisp fried potatoes, fried eggs and rich yolk that breaks over the potatoes as you eat. The result is somewhere between tapas, comfort food and a plate everyone immediately wants to share.

What are Huevos Rotos?

Huevos Rotos are a Spanish dish built around potatoes and fried eggs. The eggs are placed over the potatoes and then lightly broken so the yolk runs down into the crisp edges underneath.

Some versions include jamón, chorizo or other toppings, but the heart of the dish is the contrast between crisp potatoes, soft egg and rich yolk.

Why “broken” eggs?

The point is not to scramble the eggs. The yolks should still be soft enough to coat the potatoes when they are broken open. That mixing happens at the table and is part of the appeal.

It is uncomplicated food, but it works because every part has a job: the potatoes give texture, the eggs give richness, and the yolk turns the whole plate into something much more indulgent than the ingredient list suggests.

Huevos Rotos at Jamon Jamon

Our Huevos Rotos are made with crispy fried potatoes topped with fried eggs that are lightly broken over the top. It is one of the newer dishes on our menu and one of the easiest plates to put in the middle of the table and share.

What should you order with Huevos Rotos?

Because Huevos Rotos are rich and comforting, they pair well with lighter or sharper tapas. Padrón Peppers add freshness and smokiness, while Gambas al Ajillo bring garlic and seafood to the table.

You can also add Croquetas de Jamón, Patatas Bravas or Chorizo al Vino if you are building a larger sharing meal. The point of tapas is contrast, so ordering several very different dishes usually makes more sense than ordering plates that all taste alike.

Where can you eat Huevos Rotos in London?
