Chorizo al Vino is one of those tapas dishes that tells you exactly what it wants to be: smoky Spanish chorizo cooked slowly in red wine until the sausage takes on the flavour of the sauce.

It is rich, savoury and ideal for sharing, especially when the table already has something crisp, something fresh and plenty of bread nearby.

What is Chorizo al Vino?

Chorizo al Vino is Spanish chorizo cooked in wine. The exact preparation varies, but the basic idea is to warm the sausage gently so its paprika-rich oils combine with the wine and create a deeply flavoured sauce.

It is a classic example of why tapas do not need complicated presentation. A few strong ingredients, cooked properly, are enough.

What does it taste like?

Spanish chorizo brings smoke, paprika, salt and richness. Red wine adds fruit, acidity and depth. As the dish cooks, the two flavours become more integrated and the sauce takes on the colour and seasoning of the chorizo.

The result is richer than sliced cured chorizo and much more saucy. It is also exactly the sort of dish that encourages people to reach for another piece of bread after the chorizo itself has disappeared.

Chorizo al Vino at Jamon Jamon

Our version is Spanish chorizo slow-cooked in rich red wine. It is one of the dishes currently featured on the Jamon Jamon menu and one of the easiest plates to combine with a broader tapas spread.

What should you order with Chorizo al Vino?

Because Chorizo al Vino is smoky and rich, balance it with tapas that bring different textures and flavours.

Padrón Peppers add a fresh, blistered green flavour. Gambas al Ajillo bring seafood and garlic. Croquetas de Jamón add crispness and creaminess. A plate of Jamón Ibérico gives you another side of Spanish pork, but with a completely different texture and style of preparation.

And if you want to turn several small plates into a longer dinner, follow the tapas with paella for the table.
