It refers to the Iberian pig. Spain’s official Ibérico classification recognises products from animals that are 50%, 75% or 100% Iberian, with the percentage forming part of the labelling system.

Jamón Serrano belongs to the white-pig cured-ham tradition. The Spanish Serrano consortium lists breeds such as Duroc, Pietrain, Landrace and Large White among the breeds normally used for white-pig cured ham.

That difference in breed matters because Iberian pigs characteristically develop more intramuscular fat. In a good slice of Ibérico, the fine white streaks running through the red meat are part of what creates its supple texture and long finish.

Bellota does not simply mean “Ibérico”

This is one of the most useful things to know when reading a label. Ibérico is a family of products, not one single grade. Spain uses four coloured seals to identify the main categories.

Black seal: Bellota 100% Ibérico — both parents are 100% Iberian and the pig completes its final fattening stage on acorns and natural resources of the dehesa.

Red seal: Bellota Ibérico — 50% or 75% Iberian ancestry, also finished on acorns and natural dehesa resources.

Green seal: Cebo de Campo Ibérico — Iberian pigs raised with outdoor access and fed cereals, legumes and pasture.

White seal: Cebo Ibérico — Iberian pigs raised on farms and fed mainly cereal and legume feed.

What about curing time?

Both hams are salted, dried and matured over time, but Ibérico typically demands a much longer process. The Iberian-sector body ASICI states that the quality standard sets a minimum of 20 months for Jamón Ibérico, while many premium pieces mature for substantially longer.

Serrano curing varies by producer and quality scheme. The Consorcio Serrano standard, for example, requires at least 52 weeks. Time alone does not tell you which ham is “better”, but it helps explain why top Ibérico develops such complex aroma and texture.

Which one should you choose?

Choose Serrano when you want a straightforward, savoury cured ham that works easily in sandwiches, on sharing boards and alongside other tapas. Choose Ibérico when the ham itself is meant to be a focal point and you want to explore the richer flavour and softer texture created by Iberian genetics, marbling and—at the top end—acorn finishing.

Neither name guarantees that every piece will taste identical. Producer, curing, breed percentage and feeding category all matter. The most useful habit is to read the label rather than treating “Ibérico” as a single quality level.

How Jamón fits into a tapas table

Good cured ham needs very little intervention. Thin slices, served at a temperature where the fat can soften, are enough. On a tapas table it works particularly well beside olives, tomato bread, cheese and dishes with sharper or warmer flavours.

If you are new to Spanish small-plate dining, our existing guide to tapas explains how the sharing style works and what to order for a first meal.

FROM READING TO EATING

Taste Spanish ham as part of a proper tapas meal

Jamon Jamon serves Spanish food in Soho and Belsize Park.
